Using eggs from Salt Fork Farms has proven to be a richer product for our customer. The egg yolks give all of our custards rich flavor and extreme color. I clearly wanted to show the difference in lemon curd when using local, pasture raised and fed eggs. I have asked the farmer (Eric Menzel) to contribute to this blog and educate us why this is so. Read below.

The color (and consistency) of egg yolks is due to two main factors:

1) the diet (and coincidently the environment) of the chicken

2) the breed of chicken

Primarily, the color of a yolk is caused by chickens eating green things. Our birds have kelp meal in their feed and graze on pasture, so they consume green plants on a regular basis. The green chlorophyl from the plants is imparted to the yolk. Some larger commercial egg companies add colorants to the feed in order to achieve this effect, but you can still tell the real deal. The consistency of the yolk and the white (albumen) is due to both the breed of chicken and the environmental conditions they experience. Our chickens are standard breeds, bred for both eggs and meat. These breeds were developed over 50 years ago in New England to be what we now know as free-range. They thrive in open fields, hunting bugs, scratching for roots, and pecking away at green leaves. The diversity of their diet on pasture and thus the nutritional intake they receive give the egg a rich viscous consistency. Oh the custards we can make!

This is a cake we were asked to do a while back and we just got the photos from it. It was a take off of Momofuku's Beer/Ganache/Wedding Cake. It turned out well for being out of our style zone. The customer was happy and we got to slip outside our zone as well.

This is a view from the bridge adjacent to DeLuxe. A 1930's steam engine rolled by and we all got a peak. Visually, it was stunning and it sounded magnificent. It was such a treat for all of us in the front and back of the house to see.

Wilson's Apple Orchard

DeLuxe went shopping. With a wad of cash we got crates of apples, bags of cherries, and jugs of apple cider. Wilson's Apple Orchard is a gold mine for local chefs (and families).

Caramel apple coffeecake and apple-cherry pistachio frangipan tarts are one of the many we are baking up.

November awaits our 6 apple, double crusted apple pie.

We can't wait for the next crate!

This customer came to us a week ago. Both he and his love run/jump for the university track team. She pole-vaults, he races 400. He wanted a pole-vaulting penguin cake for her. He came to us well in advance and drew it out for us many times. He also staged the whole thing so each gift came out at just the right time. The bakery was filled with anticipation for the event. All of us gals got into it. As you can see, so did she.

He has set the bar, to say the least.

A note: Paige and Richard have been coming in the bakery ever since I have had my doors open. There we're times Paige was in twice a day. She is one of my most unique customers. She has an extreme sense of style, creativity, and always looks like a million bucks. It was an honor to be a part of their wedding this weekend. It was by far one of the most decked out weddings I have ever seen. Our cupcakes and cake have never looked better, thanks to Paige's showcasing and theatrical flair.

This is one of my favorite places to deliver a cake. It is one of the most breathtaking places in the Iowa City area to have a wedding. The Motley Cow catered the event and did an amazing job bringing local, farm-fresh food to the table.

Wrapped up the weekend with this square fondant cake.

Its humid in Iowa, so fondant can be a curse and a blessing at the same time.

Fondant keeps the cake intact, but is flimsy and sticky to the touch, leaving fine detail work tricky.

This cake goes down as THE heaviest we have ever lifted. The base is carrot and next layer up is Red Velvet, then chocolate, then white.

It starts with simple black fondant flower cut-outs to dry overnight.

Placement is everything,.......... balance and flow.

Owner: "No" to rhinestones. "Someone might chip tooth, end of story."

Bride: "Yes" to rhinestones. "But I want them on the cake"

Owner: "Well.......I'll tell the caterer to remove all flowers before cutting. Alright....do you have the rhinestones?"

Bride: "Yes, I have a whole vile left"

Owner: "Bring'em"

Bride was right. Rhinestones made this cake step out with serious style.
